Super Easy and Tasty Cauliflower and Broccoli Salad

Ingredients

½ head of cauliflower

½ large head of broccoli

3 rashes middle bacon

2 cheeks of red capsicum

½ to 1 cup grated tasty cheese

½ cup whole egg mayonnaise

½ cup cream cheese

Gherkin liquid out of jar or apple cider vinegar and sugar/Xylitol or other granulated sweetener (just add little amounts until desired taste achieved) or lemon juice

Almond slices and chopped chives to garnish.


Method

Break cauliflower and broccoli into small florets and steam until just soft.

Dice bacon and fry until desired crispiness.

Dice up capsicum.

Add the cauliflower, broccoli, capsicum, grated cheese and bacon to a bowl (reserve the bacon fat).


To make dressing add the mayonnaise and cream cheese to a bowl. With a stick blender or whisk beat until smooth and creamy. It will be thick but will thin out once you add the Gherkin liquid. Add the reserved bacon fat (lots of flavour) and gherkin juice. If you are not into gherkins you can use Apple Cider Vinegar or lemon juice. Just keep adding to the mayonnaise until to reach your desired taste. To add a little sweetness add either Xylitol (low carb) or other granulated sweetener to desired taste.

Garnish with almond flakes and chopped chives for added texture.
